Spring Work

Winemaking is an ongoing journey, a cyclical process that demands attentiveness and preparation from one harvest to the next. Every step, from soil cultivation to pruning and shaping the grapevine cordons, is interconnected. Balancing the vine’s nutrient needs with soil resources is essential. Maintaining fertile, healthy soil plays a crucial role in ensuring the sustainable growth and vitality of the vines.

Disease control is an essential aspect of maintaining healthy vines. Rather than relying solely on expensive machinery or excessive chemical additives, we prioritize manual labor to minimize risks and support the plants naturally.

In recent years, our vineyards have faced significant challenges due to climate change, with an increasing frequency of droughts putting considerable stress on the vines. To address these issues, we have implemented an efficient drip irrigation system. This system provides water and nutrients precisely when the plants need them most, ensuring their resilience and ability to thrive despite environmental pressures.

Before processing, each crop is carefully hand-sorted in the cellar. Advanced high-tech machinery is then used to gently remove stems without harming the fruit. To enhance the refinement of the final product, we avoid using pumps during the residue processing stage.

Every step in tending our vineyards is dedicated to achieving high-quality yields, culminating in a well-timed harvest that greatly influences the taste and overall quality of the wine. By focusing on optimal ripeness without sacrificing quantity, we ensure excellence through hand-picking and meticulous transportation practices.

The fermentation process, the most crucial and delicate step in winemaking, begins in accordance with the grape variety and maturity indicators. It demands continuous attention and oversight to achieve the best possible results. In addition to precise temperature control, we use a balanced combination of “pumping-over” and “plunging cap” techniques to develop the desired phenolic profile.

The Bottling

To enhance the extraction of color, aroma, and flavor, and to further enrich the wine’s complexity, we use oak barrels throughout both the fermentation and aging processes. Our premium wines ferment in oak vats and are aged in individually toasted barrels.

After bottling, these wines undergo an extended aging period in our carefully maintained cellars. Through regular tastings and assessments, we monitor their progress. Once the desired taste and maturity are achieved, the wines are ready to be enjoyed by the public.
